Hey guys! Let’s start out with some brutal honesty: this isn’t really a recipe. I would say it’s more of a new perspective on a great ingredient. I’ve always loved watermelon. I can remember sitting on a Mississippi carport with my grandparents, newspapers covering the table in front of us, eating sun-warmed watermelon. We’d each grab a big wedge and begin cutting out bite-sized pieces, salting each and every bite. It’s a memory that comes rushing back to me every time I eat a watermelon to this very day. Don’t you just love food memories?
Well, my newest way to love watermelon is as a drink. Watermelon Juice is cool, smooth, sweet, and oh-so-delicious! Because the fruit has a high water content, it blends into a drink really well. It’s thicker than orange juice, but way thinner than a smoothie. Since there isn’t any ice added to this, I recommend chilling your watermelon chunks before making this drink so that it will be nice and cool. I’m definitely partial to warm watermelon itself, but Watermelon Juice is at its best when it’s cold.
Even though this is a really simple drink, there are a few different variations that are really good, so feel free to experiment! Add a few mint leaves for a refreshing burst of brightness. Add some lime juice and enjoy the contrast that citrus brings to the watermelon. Really, this is a delicious base for any flavor highlights you might want to add. - 6 cups watermelon, cubed
- Dash of salt
- Chill watermelon for 1 - 2 hours or until cold
- Place watermelon and salt in blender
- Blend on high until smooth
